Don't be fooled by this meatless sandwich! This delicious Pan-Seared Sweet Potato and 3 Beans Hummus Sandwich is jam packed with protein.

Ingredients for hummus:
1 can of 3 beans or chickpeas
2 cloves of garlic
1 tsp red chilli flakes (optional)
1 tsp salt
4 tbsp tahini
3 tbsp good quality olive oil
3 cubes of ice and 1 tbsp cold water
1 tsp lemon juice
½ tsp sumac (optional)
Ingredients for sandwich:
Vegetables of your choice (onion, tomatoes, cucumber etc.) sliced
2 small sweet potatoes thinly sliced
¼ tsp cumin powder
1 tsp grainy mustard
2 tbsp unsalted butter
Salt to taste
Crushed black pepper to taste
Coriander and mustard microgreens for garnishing (optional)
2 tsp olive oil
Good quality sourdough bread toasted
Instructions:
For hummus:
Wash the canned beans thoroughly to get rid of the brine. Soak the canned, washed beans in hot water for 5 minutes. Drain the beans and tip it in the food processor bowl.
Add rest of the ingredients except, olive oil. Start blitzing the beans whilst adding the olive oil. Make a smooth paste.
Heat a heavy-bottomed pan and pan roast the sweet potato slices by adding olive oil. Sprinkle cumin powder and salt over the roasted sweet potatoes. Keep it aside.
Mix unsalted butter and grainy mustard together. Spread it on the toasted bread slices from one side. (the side which will have a filling).
Spread the hummus generously. Place the sweet potato slices with the vegetables of your choice. Repeat for one more level if you fancy a big sandwich.
In the top layer, add in the microgreens, onions and big dollops of hummus.
Serve immediately.
